We love Riesling but it's not really a Hunter variety, so we thought a cracking Riesling from a local winemaker using beautiful cool climate fruit was an excellent opportunity! 

This parcel of Riesling from the Hudson Vineyard in Hilltops was a delight to work with, needing minimal intervention in the winery. We embraced its natural generosity of style—gently pressing, fining, and racking the juice before fermenting with a neutral yeast strain to highlight the vineyard’s character and varietal expression. The wine spent three months on light lees to build body and texture, before being racked and prepared for bottling.

The result is a vibrant Hilltops Riesling with an enticing array of floral and juicy lime aromas, underpinned by great flavour intensity. The medium-bodied palate shows poise, balance, and freshness, with effortless minerality and a persistence of flavour that reflects the quality of the season. A wine with a long future—cellar carefully over the next 3 to 5 years.
