David Hook 2023 Vermentino
Grown on the slopes of Mount Canobolas, this Vermentino is rich with elegance and an earthy mineral spectrum.
The grapes were whole bunch pressed and the juice drained directly into older French barrels for fermentation. The resulting wine was left on lees in the barrels for six months before coarse filtration and bottling.
This wine is pale yellow in colour with bright green tinges with aromas of fresh fruits, spice and herbs. The palate is flavoursome with salinity, slight phenolic bitterness and stony spectrum finish. Ideal for consumption now and will cellar well for 2 to 4 years.
A great wine for medium weight dishes with herbs and spices. The perfect wine with grilled sardines.
