This wine is a blend of Tawny's of various ages. The oldest wine being over 30 years old, blended with 10 - 15 year old and freshened with young 5 year old wine. Using classic Australian Tawny varieties Shiraz and Cabernet, the grapes are allowed to fully ripen before harvesting. After crushing a partial fermentation is allowed before pressing. A specially selected spirit is used to fortify the young wine. The wine is then stored in old barrels for many years to develop the desired aged rancio tawny characters.

This wine has spicy fruit cake and raisin aromas underpinned by burnt toffee, maple syrup & dried fruit. A blend of young fresh tawny with older softer material resulting in a rich full palate with fine smooth spirit.

Tawny is usually served with Stilton and hard cheeses such as cheddar or also with Christmas cake or fruit puddings. It is also a useful ingredient in the kitchen for deglazing and works particularly well with chicken livers, lambs fry and will add richness to slow braised meat sauces.
