The Limited Release Shiraz is from several small parcels of Pokolbin Shiraz, blended together to create a wonderful approachable wine. Once in the winery the fruit is crushed and left on skins to cold soak for maximum colour and tannin extraction, for several days before being pressed into stainless steel for fermentation. A portion of juice was then drained off and sent to oak to complete fermentation which gives the final wine a lovely complexity and roundness to the mouthfeel.  After an extended period of time in barrel, the wine was blended using the best components to give weight and complexity whilst maintaining a vibrant freshness which will allow the Shiraz to mature and develop beautifully in bottle.
